Serves 4
6 Cups Water, Vegetable Stock or Bone Broth
1 Large Leek, sliced
1 Pound Organic Fresh or Frozen Green Peas, thawed
4-5 Garlic Cloves, minced
1 Cup Parsley, chopped
Salt and Pepper, to taste
Green Onion (optional garnish)
1. In large pot turn heat to high and add water, vegetable stock or bone broth. Let water come to a boil.
2. Add Leeks, Peas, Parsley and Garlic. Turn stove down to medium. Cook for 20 minutes or until vegetables are soft.
3. Remove from heat. Let cool for 15 minutes.
4. Blend soup together with hand blender or high speed blender.
5. Garnish with Green Onions (optional).
